Zucchini Burger Patties
These can be eaten as a #maindish like an #openfacedsandwich on top of bread, buns, or whatever you like. Also can be eaten as #veggieburgers on your favorite buns! 🤤👍 Further, they can be eaten as a substitute for #eggplantparmesan or simply as a #sidedish of GIANT, breaded, cheesy, #zucchini deliciousness! 🤩 I made these one day because I had the Biggest zucchini I'd ever seen and didnt know WHAT to do with it! This was a Great Idea! 👏👏👏 (seriously, 🙄 it was as wide as & longer than my carton of eggs!😂🥳)

Cooking instructions
* Step 1
PreHeat oven to 350°. Meanwhile, heat vegetable oil in a large skillet over medium high heat.
* Step 2
Next, In a large bowl, combine bread crumbs, parmesan, salt, & pepper. Place your flour in another bowl. And in a 3rd bowl crack your eggs and whisk them. Set aside.
* Step 3
Chop your peppers, onions, garlic, tomatoes, & herbs. Set aside.
* Step 4
Dip zucchini slices, piece by piece, into 1st the flour, then the eggs, finally the bread crumbs. Drop them a few at a time into the hot oil. Deep fry, flipping once, until they are as crispy & brown as you want them to be.
* Step 5
Place fried zucchini slices directly onto greased or foil covered cookie sheet or baking tray, casserole dish, ect. Prepare to chop & place your toppings.
* Step 6
Cover each fried, breaded, zucchini slice with 1-2 tablespoons of spaghetti sauce. Cover with toppings according to taste.
* Step 7
Next, add shredded mozzarella cheese or any shredded cheese. Then, Add a touch of chives to the top.
* Step 8
Place into oven and bake at 350° for 20-30 mins or until cheese is melted to your preference.
