Irmgards Cheesy Bacon Melt with Jacket Potato
Never made it before but ad lib this was amazing and filling. Hubby doesn't eat potato skin when cooked in microwave but eats it when jade like this. Potato skin lovely and crispy with fluffy inside..
Cooking instructions
* Step 1
Wash and dry jacket potato, prick the skin allover, season with salt and rub butter on it. Wrap in tin foil and put in oven on 180° or halogen. I used halogen. Time depends on size of potato
* Step 2
When potato over half way cooked put bacon under grill or on foil in air fryer I used air fryer
* Step 3
Put oil in frying pan or wok add onions and asafoetida and gently fry.
* Step 4
If air fried bacon use fat on foil in pan (if grilled add bit oilve oil) and add cheese in small pieces then fry on low until nearly melted, then stir in milk.
* Step 5
Cut bacon in half and add to cheese mix and mix well. Simmer about 29 minutes or until potato is cooked.
* Step 6
Cut potato in half arrange bacon on and around it then pour on cheese mix.
