The Bomba Jerk Pork

Jerk Pork had always been very popular in the Hawley Crescent menu. I decided to give it my own signature by adding a bacon basket to the equation. Everything's better with bacon, so the song goes (and this is no exception). Sorry that I'm not being specific on my measurements, but I'm cooking an 8.5 lb pork loin rib half. Works wonderfully with pork tenderloin as well.

Cooking instructions

* Step 1

Dry rub the pork up to a day ahead with seasoning and paste.

* Step 2

Add lime juice and chicken broth to roasting pan with pork.

Weave bacon around pork roast and put into preheated 375°F oven for one hour

* Step 4

When roast reaches an internal temperature of 165°F it is finished cooking. Let stand for ten minutes and dig in. Enjoy!
