Pasta with oven-roasted tomato and onions, basil, black garlic and balsamic vinagre

Pasta with oven-roasted tomato and onions, basil, black garlic and balsamic vinagre

So I finally bought some black garlic which has become quite popular in Spain because of its sweet flavour without that after taste. Found it is certainly an interesting ingredient but not so mind-blowing, next time I make this I'll just roast a few garlic cloves with the tomato and onions. Either way this is a super easy way to make a tasty pasta sauce.

Cooking instructions

* Step 1

Put tomatoes, onions, basil, balsamic vinagre, pistachios salt and pepper in an oven dish with a dash of olive oil and a dash or two of balsamic vinagre and roast for 40 mins at 200º

* Step 2

Cook the pasta according to instructions - I usually add a basil leaf, salt and dash of oil to the water. Grate the parmesan cheese

* Step 3

Drain the pasta and add the grated cheese and black garlics

* Step 4

Add the roasted veg to the pasta and mix well

* Step 5

Serve and add some fresh basil and extra black pepper. Enjoy!!!
