Paladda/ Ada Payasam

#indiankitchen #tasteofmalabar One of my favourite and most popular payasam/ kheer from Kerala and served during feasts and festival in Ada payasam or Paladda

Ingredient

1/2 cup

sugar adjust

50-55 gm

Ada

1/4 teaspoon

cardamom

1 tbsp

cashews

1 teaspoon

ghee

1 teaspoon

raisins optional

Cooking instructions

* Step 1

Heat milk in deep bottom vessel and bring to boil stirring occasionally

On boiling, add Ada and sugar

Mix well, reduce heat to low and cook stirring occasionally

* Step 4

Do stir occasionally and it takes around 40-45 minutes to cook

* Step 5

Cook until milk has reduced to half and has thickened. Paladda on cooking gets light rose hue

Add cardamom powder and mix well. Switch off

Heat ghee in small vessel and fry cashews until golden brown

Pour the fried cashews in payasam and mix well

Serve warm or cold as desired
