Chicken with veggies in peanut curry sauce
I love Thai peanut sauce, but I don't always have the ingredients like fish sauce or red curry paste that other recipes call for. So this is my Indo-Thai version.
Cooking instructions
* Step 1
Wash chicken a few times with clean water. Drain. Then marinate for 30 minutes.
* Step 2
Refrigerate to keep fresh
* Step 3
In the meantime, cut up your veggies, starting with onion. Cut half of the onion in strips, and the other half chopped.
* Step 4
Oil to the bottom of the pot, saute chopped onion, then add chilies and bay leaves to temper in the oil.
* Step 5
Next, add the chicken and cook on medium heat until browned. This can take 20 minutes to cook through.
* Step 6
During the chicken cooking, you have time to prepare the peanut sauce and chop fresh cilantro.
* Step 7
When your chicken is cooked we'll, add your veggies. Cook with the lid on 5 minutes on low heat
* Step 8
When the veggies are cooked to your liking, then it's time to add the peanut sauce and fresh cilantro
* Step 10
Serve with rice or naan if you desire. Enjoy 😋🙏
