Roasted Squash & Chickpea Salad
I had some leftover roasted squash from dinner last night so I made this salad with it today. It has Mediterranean vibes and made me think longingly of the sun .... which is currently missing in action 🧐
Cooking instructions
* Step 1
Prepare the ingredients as above. My spring onion was huge! 😆 Photo below so that you can admire it!
* Step 2
Simply mix everything together. I kept the veg finely diced (I roasted it in larger pieces and then diced when it was at room temp but it would work either way.
* Step 3
I finished with a sprinkle of pumpkin seeds for some crunch.
