Turkey & Mushroom Soup
We’re on the last of the Christmas dinner leftovers today. We’ve had a lot of rich food lately so I fancied some soup. I made turkey stock from the carcass a few days ago, but you can use any other stock off you don’t have any.
Cooking instructions
* Step 1
Gently fry the sliced sprouts in garlic oil for a few minutes. Then add the mushrooms and stir for a few mins.
* Step 2
Add the stock, water, cranberry sauce and shredded leftover turkey. Bring to the boil then simmer covered, for 20 mins until the veg is soft and tender.
