Pretending it’s Summer Salad
It’s a bit chilly for a salad but there was smoked salmon in the fridge and I love it on top of a crisp salad. I added dried chipotle chillies for some heat. My avocado wasn’t very ripe but I like firm avocados diced into a salad like this.
Cooking instructions
* Step 1
Dice up your salad veg and put it in a bowl. Drizzle with a glug of olive oil and a drizzle of lemon juice. Season, add a pinch if chillies and then give it all a good mix.
* Step 2
Transfer your salad to a cleaner plate if you want, then top with smoked salmon, pine nuts and pumpkin seeds. Done!
