No Bake Summer Granola Bars

No Bake Summer Granola Bars

Having the oven on isn’t always a tempting option during warm summer days. These no bake granola bars are nicely chilled and really delicious. A good quality granola really lifts them if you can get one. #summerchallenge2

Cooking instructions

* Step 1

Line a rimmed baking dish with cling film. I gave the film a really thin coating of vegetable oil to stop it sticking - you could probably skip this step.

* Step 2

Mix together all the dry ingredients in a large bowl.

* Step 3

Melt the peanut butter, coconut oil and maple syrup in a saucepan. Then pour the melted liquid mix into your dry ingredients.

* Step 4

Transfer the mixture into your prepared baking tin, press it down firmly. Cover with cling film and chill in the freezer for 1 hour.

* Step 5

Cut into squares to serve.
