Zingy Quinoa & Rice Salad
I’m pleased with this salad, the dressing in particular. It’s made by blitzing onions with lemon juice and olive oil to make a lovely thick, almost creamy dressing. #summerchallenge2
Cooking instructions
* Step 1
Add the dressing ingredients to your blender and blitz until nicely blended - but don’t purée it, a few lumps are fine. Taste it here and adjust with more honey, salt and pepper as you like.
* Step 2
Chop the salad ingredients. Remove the seeds from the tomatoes before chopping (this stops the salad getting watery). Mix it all together.
* Step 3
Add the quinoa (check the packet instructions and cook then cool if needed).
* Step 4
Add the dressing a bit at a time until you get a good coating - don’t do what I did and just tip it all in. It was a bit too much and made it all just slightly too wet.
