Low carb pancakes made with ground almonds, eggs and coconut milk for #PancakeDay

Ingredient

2 tsp

xylitol

1/2 cup

coconut milk

1 1/2 cups

ground almonds

Cooking instructions

* Step 1

Whisk together the egg yolks, coconut milk and xylitol.

* Step 2

In a separate bowl mix together the almond flour and baking powder. Then mix them into the egg yolks.

* Step 3

In a final bowl whisk the egg whites. Then fold these into the batter.

* Step 4

Heat a small amount of coconut oil in a non-stick pan then fry a small amount of the mixture for a few minutes each side.
