Mince Pie Roulades
I saw Jamie Oliver make something similar on the tv years ago. I have no idea what that original recipe is, but the idea of a roulade stuck. These are so simple and you can make them with shortcrust or puff pastry. Most shop bought pastry is #dairyfree as it uses margarine rather than butter.

Cooking instructions
* Step 1
Lightly oil a shallow mince pie tray and pre heat the oven to 195 C.
* Step 2
Unroll the pastry on a work top, keeping it omits sheet of parchment paper.
* Step 3
Spread the mincemeat over the pastry, then sprinkle with cranberries and the chopped pistachios.
* Step 4
Roll the pastry up using the parchment paper to tip the roulade up and allow the weight of the roll to help it along.
* Step 5
Use a large sharp knife to slice rounds off the roulade. Place each round in a well of your baking tray.
* Step 6
Bake for 25-30 mins until crisp and golden.
* Step 7
Allow to cool and dust with icing sugar.
