Smokey Baba Ganoush
This cheats version of baba ganoush takes only a few minutes of preparation and I really like it. I didn't have time to roast the aubergine over an open flame, so I cheated with smoked paprika and I think it works well!
Cooking instructions
* Step 1
Rub the whole aubergine in a little olive oil and roast in the oven at 190°C for 45 minutes.
* Step 2
Allow the aubergine to cool then scoop the middle of the aubergine into a food processor.
* Step 3
Add the tahini, lemon juice, olive oil, garlic and salt and blend until the dip is nearly smooth. Taste the dip and add more lemon and salt to your taste.
* Step 4
Spoon the dip into a serving bowl then drizzle with olive oil and a generous sprinkling of smoked paprika.
* Step 5
Serve with toasted wholemeal pitta breads, seeded crackers or vegetable crudités.
