Speedy Mushroom & Sausage Pasta
This healthy recipe is gluten-free (if you use buckwheat pasta) and takes hardly any time to make. I shared the recipe with my family and they have been obsessed with cooking it over the last few weeks! Perfect for a speedy mid-week meal.
Cooking instructions
* Step 1
Boil the pasta, according to the instructions on the packet. Drain and set to one side.
* Step 2
In a large frying pan, fry the sausage slices in the olive oil for 5 minutes until they are just cooked through.
* Step 3
Add the mushrooms to the pan and continue to cook, stirring occasionally until the mushrooms are starting to soften and release their juices.
* Step 4
Add the drained pasta to the pan, then stir through the creme fraiche.
* Step 5
Stir in the spinach leaves and then serve, just as the spinach leaves are starting to wilt.
