TZATZIKI (Cucumber Yogurt Dip)

#goldenapron Tzatziki is a Greek-style sauce, typically served as condiment with meat dishes and vegetables, or as part of an assorted meze small plate platter that is traditionally served.

Ingredient

1⁄2 large

Cucumber

3 tablespoon

Dill, finely chopped

1tablespoon

fresh Lemon juice

1tablespoon

Olive oil

as per taste

Cooking instructions

* Step 1

Grate the cucumber add to it the minced shallot and toss with some salt. Set it aside for 5 minutes to ooze out the cucumber juice. The salt helps to draw out moisture from the cucumber.

In the meantime, chop the greens – dill, mint and crush the garlic. Now squeeze excess water from the cucumber, else the sauce will be runny. To this add crushed garlic.

Transfer the Greek yogurt in a bowl and give a gentle mix. Greek yogurt is nothing but the thick yogurt. If you feel your yogurt is not thick, let it rest in a strainer for an 1 hour to drain off any water.

* Step 4

Now add the chopped greens and season with lemon juice, pepper and salt. Mix it all together and voila. To serve it, add a touch of extra-virgin olive oil for flavor and shine and sprinkle with paprika. Serve it with pita bread or fresh cut vegetables
