Best Xmas Gammon Joint

Ingredient

Cooking instructions

* Step 1

Unwrap the gammon but LEAVE ON ANY STRING, OR PLASTIC SLEEVE (this holds it together while boiling). Wash the gammon in a pan of water (or soak overnight if the butcher recommends this).

* Step 2

Rince & dry the gammon with kitchen towel.

* Step 3

Put in a large pan and cover with cider and boiling ingredients (fruit and veg roughly chopped). Cover with lid.

* Step 4

Bring to the boil and simmer for 20 mins per 450g, plus 20,mins extra (i.e 109 mins for a 2kg joint). Formula if W = weight in grams 20 x W ÷ 450 = G G + 20 = Total boiling time in minutes

* Step 5

Skim off any scum/froth from liquid surface and turn over meat half way through, for even cooking.

* Step 6

After boiling, leave in the stock (lid off) for 15 minutes, to cool a little (helps keep meat moist).

* Step 7

Remove from pan, remove any string/plastic sleeve and scrape off any scummy/rusty bits. Pat dry with kitchen towel.

* Step 8

Preheat oven to 190C. Remove the skin (but not the fat) off the gammon joint.

* Step 9

Score diamond shapes on the fat. Mix glaze and coat the gammon (work into nooks with fingers) then stud with cloves. Garnish with bay/star anise/orange if you wish.

* Step 10

Cook in the oven for 30 minutes (you can boil/glaze the joint the day before, then bake on Xmas day)
