Baigan Ka Bharta

#cookpadturns2 Baingan ka Bharta is a popular Punjabi dish made with roasted and mashed Baingan and lots of onion. I added green peas also, it looks good and tasty too

Cooking instructions

* Step 1

Put the baigan (eggplant) in aif-fryer instead of roast on heat.

* Step 2

It takes 10 mins to roast, it turns in brown colour and easily remove the skin.

* Step 3

Mash the baigan.

* Step 4

Heat oil in a pan, add finely chopped onions and green peas and fry till the onion transparent.

* Step 5

Add ginger and garlic paste.

* Step 6

Add chopped tomatoes, stir till oil separates.

* Step 7

Add Red chilli powder, kashmiri mirch powder, coriander powder, garam masala and salt.

* Step 8

Add Mashed baigan and mix them well.

* Step 9

Cook for another 5-6 mins

* Step 10

Garnish with green chillies and green coriander leaves.

* Step 11

Served with hot chapaties and parantha.
