Hearty Oat Cookies (eggless)

These are not-too-sweet healthy cookies full of nuts, grains, and dried fruit. I used assored nuts, raisins,flax seeds, dry fruits, chia seeds etc to make these hearty cookies. A perfect snack for health conscious people.

Cooking instructions
* Step 1
In a large bowl, whisk together the flours, sugar, cinnamon, and salt.
* Step 2
Add the oats and coconut and toss to combine. Fold in the nuts, raisins, cranberries, flax seeds and chia seeds.
* Step 3
In a small saucepan, melt the butter.
* Step 4
In another small bowl, combine the baking soda and boiling water, then add to the melted butter (it will become frothy).
* Step 5
Make a well in the center of the oat mixture, pour in the butter mixture and mix to combine.
* Step 6
Also add in plain yoghurt 2 tablespoon at a time to make a soft and sticky dough. Don't add in yoghurt at one go, add in batches until required to make the dough.
* Step 7
Line a baking tray with 2 baking sheets or parchment paper.
* Step 8
Using wet hands, form the mixture into 12-15 balls and place on the prepared sheet, spacing them 1 1/2 inches apart.
* Step 9
Gently press each ball down so that it is 1 inch thick.
* Step 10
Heat oven to 180 degrees C for 10 minutes.
* Step 11
Bake the cookies until golden brown, 18 to 20 minutes.
* Step 12
Take out from oven and let cool completely on the baking sheets.
* Step 13
Keep them in air tight container and enjoy those hearty cookies with tea or coffee.
