Garlicky kheer with methi flavour
#WinterRecipes
This special and unique sweet dish is a traditional kheer of farmers of Assam, my native place. A special kind of rice which grows only in winters in locals(bherapawa) is used to make this kheer. It is generally served as breakfast . This kheer has some medicinal value also with the addition of garlic and methi(fenugreek seeds). I don't have that variety of rice, so I made this with Jesmine Rice(which resembles bherapawa).
Ingredient
Food ration :
6 servings
Cooking time :
45 minutes
Cooking instructions
* Step 1
Soak rice and fenugreek seeds together overnight or atleast 2 hours.
* Step 2
Take a saucepan and put soaked rice,salt and methi seeds.
* Step 3
Add 2 cups of water and start cooking.
* Step 4
Add bay leaves and crushed garlic.
* Step 5
Cook until rice become soft.
* Step 6
Stir with a whisk to mash the rice.
* Step 7
Now add milk and mix well.
* Step 8
I always add milk when rice cooks completely.
* Step 9
If you add milk at the beginning of the cooking rice will take longer time to soft.
* Step 10
Add grated jaggery and mix.
* Step 11
Now check the sweet level. You can add more jaggery if you like more sweet.
* Step 12
When the kheer comes to a desired consistency remove from heat.
* Step 13
Garnish with some grated jaggery.
* Step 14
Serve warm or room temperature.
* Step 15
The aroma of methi with garlic is giving unique flavour to the kheer.
