Sweet and Sour Eggplant and Paneer

This is a special sweet and sour flavoured eggplant and paneer dish. I made a spicy little sweet and sour sauce with my favourite citrusy fruit orange and dipped fried eggplant and flavoured paneer in it. Also gave some extra punch from the tomato salsa. I am sure you will love this unique flavoured veg dish.
Cooking instructions
* Step 1
To make paneer heat 1 litre of milk.
* Step 2
Add chilli flakes, kasoori methi and salt.
* Step 3
When milk starts boiling slow the flame and add vinegar.
* Step 5
Remove from heat and keep aside for 10 minutes.
* Step 7
Tie the cloth and press with a heavy weight.
* Step 8
Keep overnight to make a paneer slab.
* Step 9
Cut paneer and eggplant in round shape(1 cm thick).
* Step 10
Marinade eggplant with salt,haldi & red chilli powder for 30 minutes.

Now pan fry both paneer and eggplant with little oil.Keep aside.
* Step 12
For the sauce take 2 cups of orange juice in a pan and start heating.

When it starts boiling add salt, chilli flakes, lemon juice and coriander leaves all as per your taste.

Now add cornflour mix with water to make the sauce thick.
* Step 15
Stir, add sugar if necessary and remove from flame.
* Step 16
Now to make the tomato salsa chop tomato, onion and coriander leaves.
* Step 17
Take in a bowl, add salt and tomato ketchup and mix.
* Step 18
For assembling in a plate pour some orange sauce.
* Step 19
Now on the center place shallow fry paneer roundal.
* Step 20
Pour some more sauce and salsa.
* Step 21
Over it place one eggplant fry.
* Step 22
Garnish with tomato salsa and a spoon of thick Yoghurt or cream.
* Step 23
Pour some more sauce, garnish with green herb and serve immediately.
