Stir fry white beech mushroom(bunapi-shimeji)

Just used what I have in the fridge since I don't feel like eating meat.

Ingredient

1 stalk

leeks

1

egg

Cooking instructions

* Step 1

Heat up the pan with a little bit of vegetable oil. Sautee the onions and ginger till it caramelized a little. Add up the mushrooms, 1 teaspoon of mirin and stir fry for 1-2 mins.

* Step 2

Add the chrysanthemum greens and leeks. Beat one egg in the middle and scramble it. Stir to mix up all the ingredients. Pour a tablespoon of oyster sauce. Stir again. A pinch of black pepper to taste.

* Step 3

Enjoy 😁.
