Kubus - Arabian Pita Bread
Kubus is Arabian Pita bread that is soft and fluffy. It is usually made with all-purpose flour and yeast, baked in a traditional oven. But here I have shared Kubus recipe with an equal amount of all-purpose flour and whole wheat flour, with baking powder as raising agent, and made it on tawa. So this recipe is quick and easy as there is no kneading required, not much resting time, and can be made without yeast and oven too. But the taste is not compromised, as it is equally soft and fluffy.

Cooking instructions
* Step 1
In a bowl take all-purpose flour, whole wheat flour, baking powder, salt and mix well. Add yoghurt, little by little water and knead a soft dough. Leave it aside for 30 minutes.
* Step 2
Divide the dough into equal balls. Dust with flour and roll each ball with double the thickness of phulka/roti. Heat a tawa and place kubus on tawa on medium to low flame. When bubbles start appearing flip and cook another side.
* Step 3
Kubus starts to fluff up. Flip a few times if needed until kubus is cooked well. Remove onto a plate. Prepare other kubus too.
* Step 4
Serve warm kubus with Hummus and Falafel. I have attached a link to the Hummus recipe.
