Sukku Coffee / Dry Ginger Coffee

Cooking instructions
* Step 1
In a pan dry roast coriander seeds, jeera, pepper cons and cardamom until aromatic for 2 minutes. Transfer to a plate and let it cool.
* Step 2
With the help of mortar and pestle break the fry ginger into small pieces. Transfer it to a mixer jar and grind to fine powder.
* Step 3
You can store the fry ginger powder in an airtight container and use it for other recipes too. (Alternatively you can use store bought ginger powder)
* Step 4
Transfer the cooled mixture to mixer jar and grind to a fine powder. Add 4 tbsp prepared ginger powder and mix it all together.
* Step 5
Sieve this powder. Sukku coffee powder is ready, store it an airtight container and use it for 1 or 2 months.
* Step 6
To prepare sukku coffee for 2 person take 2 cups water in a vessel. Add 2 tsp of prepared sukku coffee powder and let it come to boil.
* Step 7
When water is boiling, add palm jaggery, tulsi leaves and simmer for 3-4 mins. Strain the tea (if using palm sugar /brown sugar or honey instead of palm jaggery, add it now). Pour it to serving cups.
