Beetroot cutlet

Beetroot cutlet is easy to make, colorful and healthy appetizer. It is made from beetroot, potato, onion, fresh coriander leaves and spices. It is crispy from outside and soft from inside. It can be served as starter or evening snack. Best accompaniment is tomato ketchup or mint chutney.

Cooking instructions
* Step 1
Pressure cook potato, peel the skin and mash it. Grate beetroot and squeeze off the juice.
* Step 2
In a bowl take mashed potato, grated beetroot, chopped onion, coriander leaves, ginger garlic paste, spices and salt. Combine everything well by adding bread crumbs as much as needed.
* Step 3
In deep plate take ingredients mentioned for slurry. Add water and mix to make lump free slurry. In another deep plate spread bread crumbs.
* Step 4
Grease the plate and heart shaped cookie cutter with oil. Place the cookie cutter on the plate and fill it with the beetroot mixture. Carefully pull the cookie cutter pushing down the patties. Prepare other patties too.
* Step 5
Dip the patties in the slurry on both sides. Then coat with bread crumbs.
* Step 6
In a pan heat oil in medium flame. Shallow fry the patties both sides on medium flame until golden and crispy. Drain them on a tissue paper.
* Step 7
Serve heart shaped beetroot cutlet with tomato ketchup.
