Almond Flour Banana Bread or Muffins

Recipe can be used to make a loaf or 12 muffins. Cooking time will vary. I added protein powder and sprout spelt flour because I didn't have enough almond flour and wanted to add more protein. I also put in 1/2 honey and topped the 1/4 c with real maple syrup.

Cooking instructions

* Step 1

Preheat oven to 350 degrees F (150 degrees C). Prepare a bread pan or muffin tin with cookie spray.

* Step 2

Mix eggs and vinegar in a bowl; add bananas, coconut oil, honey, maple syrup, and vanilla extract and stir until blended.

* Step 3

Sift flours, protein, baking powder, and salt in a large bowl; stir into banana mixture until well blended. Add chocolate chips. Do not over mix.

* Step 4

Bake in preheated oven until knife inserted into the centre of the loaf or muffin comes out clean, about an hour for loaf and 35 minutes for muffins. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.
