Garlic Shrimp

Garlic Shrimp

An overnight marinade give each juicy bite of shrimp a burst of flavour. Buy wild shrimp, not farmed, whenever possible; the texture and flavour are superior. After you've let the shrimp marinate, you can finish this dish in 30 minutes.

Cooking instructions

* Step 1

In a medium bowl, make the marinade by combining the mayonnaise, pepper, lemon juice and garlic; stir until well blended.

* Step 2

Place shrimp in a large shallow glass dish. Pour marinade over shrimp, toss until evenly coated with arrange and cover the dish tightly with plastic wrap. Store in refrigerator for a minimum of 4 hours or overnight.

* Step 3

Preheat oven to 400 degrees F. Place a wire rack in a large shallow baking pan. Remove the shrimp from the marinade and place each one in a single layer on the rack, not touching. Add the melted butter to the reserved marinade and mix together well. With a spoon, dribble a little over each shrimp until all of it is used. Bake in the preheated oven for 20 minutes or until the shrimp is opaque. Serve immediately. 235 calories/serving; GL=0, Glycals=0
