Curried Cauliflower Rice

Curried Cauliflower Rice

Avoiding carbs means not eating one of my favourite side dishes - rice! I’d heard a few people mention using cauliflower so this is my first attempt. I ate with curry and it was pretty good! #lowcarb

Ingredient

10 minutes

Cooking instructions

* Step 1

Wash the cauliflower and remove the green leaves

Slice it up into quarters ready to be grated

Carefully grate the quarters into a dish until you have a pile of rice-like cauliflower!

* Step 4

For one serving, heat 1 tbsp oil in a pan and sprinkle in 1/4 of the cauliflower, than add salt and optional curry powder.

Mix well and then cover and heat for 5 minutes before serving!

* Step 6

Note: the remains 3/4 will keep in the fridge for a few days or freeze too
