Carrot and Coriander Soup
Soups are great to make because they’re easy and also you can make a batch and enjoy a few times. This is a simple and clean carrot and coriander soup #lowcarb

Cooking instructions
* Step 1
Gather your ingredients, then peel and roughly chop the carrots, onion and garlic.
* Step 2
Add the carrots, garlic, onion, ground coriander, salt and pepper to a pot with the chicken stock and bring to a boil for 15 minutes
* Step 3
After the vegetables have softened nicely, transfer the contents of the pot to a mixer and run for 2 minutes, or until the soup is nice and smooth. Add water if needed to get the consistency you prefer.
* Step 4
Return a portion of the puréed soup to a pan and warm well. Serve with the fresh coriander on top. Salt and pepper to taste.
