Beetroot Poached Pear with Vanilla Ice-cream

Generally Pears are poached in Red Wine hence they get the red colour but this pear is poached along with fresh beetroot by virtue of which it has got this lovely Red/ Rouge color and other spices like Cinnamon, ginger and Vanilla Beans & of course a bit of sugar and lemon. Make this a day in advance, chill it and Serve this Poached Pear with Vanilla Ice-cream drizzled with the poached liquid and it would be the perfect ending to a dinner party at home. Perfect for Children ( no wine ) as well as adults ! Happy Guest Happy Host ! It keeps good in the fridge for 2-3 days dipped in poached pear syrup. My son without a word finished up everything ☺️ #mykitchenexperiment

* Step 1

Peel the pears and beetroot. Keep the stalk of the pear intact. In a pot or sauce pan, add sugar and water and mix well, add all the three powdered spices too. Place the whole peeled pears in it and cut the beetroot into pieces. The pears should be submerged in the water. Boil the pear for about 30-35 minutes or until it softenes up but still holds its shape. Pierce a knife or skewer, if it goes through easily that means your pear is done.

Take out the pear and reduce the syrup till it's about 3/4- 1 cup. It took me around 25 minutes. Pour it on the pears, let the pear soak in it, cool and then chill it in the fridge for 2 hours (cling wrap it) atleast before serving with the Ice-cream or you can chill it overnight too. Once chilled serve with one or two scoops of Vanilla Ice-cream. Drizzle the poached liquid/ syrup on top of the pear also. Garnish it with mint. Enjoy !
