Cooking instructions
* Step 1
Put all the ingredients in a bowl and add lukewarm water and knead it into a smooth dough, knead it for about 8-10 minutes, apply olive oil and cover with a cling film and let it proof for an hour.
* Step 2
Once the dough proofs (doubles in size), punch it knead it for a minute or so, divide the dough into roughly equal size and roll it thin (not super thin) into a 5-6 inches roundels. Keep it on a parchment paper. Cover with a wet thin cloth and keep it for 15-20 minutes to proof.
* Step 3
In the meanwhile, heat the oven at 250-300 °C and place a cookie baking tray with parchment paper on it. Now place the rolled out Pita bread on the tray, as many as you can accommodate in the tray. I did 2-3 at a time per batch in my oven. Once the bread swells up, turn the bread with a flat turner and let it bake for a minute or two. Each batch takes about 5 minutes. While turning the bread always use a thick silicon oven mitten otherwise the heat of the oven may burn your hand.

You can make it on a skillet too.
