This Rice Porridge is popular among the Cantonese Chinese.
It's a humble one pot meal.
The concept is " to make more from little". With little rice you can feed many.
If you don't want chicken simply skip it.
You can add vegetables instead.

Cooking instructions
* Step 1
First of all, put the water to boil in a big pot in which the rice can cook comfortably without overflowing. Wash the rice and keep it ready. Prepare other ingredients, julienne the ginger, chop the cilantro, and thinly slice & marinate the chicken with oyster sauce, cornflour, and 1/2 chicken stock cube (just crumble it), and oil. Keep it aside. Once the water boils, add in the washed rice, give one stir, cover, and cook (half lid on) for almost half an hour.
* Step 2
By that time the rice has become soft and mushy. Add the other half of the chicken stock cube. Give it a quick whisk. Now one by one add the chicken, don't add together, otherwise, it will clump up. Cover and cook for about 10 minutes. Then add the ginger julienne, keep some for garnishing and salt as per taste and give it a mix. Let it cook for another 5-10 minutes and you are done. Put it in a serving bowl and garnish it with ginger julienne and cilantro. Serve hot!
