Olive oil & Butter Poached Chicken with veggies in white sauce

You can make this simple easy delicious dinner for Christmas.... for accompaniments you can have it with butter toasted bread ( garlic & basil butter bread goes well) and a bowl of hot soup.

Cooking instructions
* Step 1
Poach the chicken breast with the ingredients mentioned except the basil leaves for about 15 -20 mins till they are done and then toss it in the oil and butter left behind.... add a tsp of butter & basil leaves and toss and saute the chicken breast....keep it on the serving plate.
* Step 2
In the meantime, blanch the Vegetables (Boil and put in chilled water...the vegetable should be cooked but not mushy) and chop and prepare the bellpeppers, onion, garlic and basil leaves.
* Step 3
In the same pan, put the veg oil and butter and heat it and add in the garlic, onion and basil and saute it. Then add the blanched veggies and the bellpeppers and saute it and put in the serving plate along with the chicken breasts.
* Step 4
For the Garlic White sauce- Keeping the flame low, melt some butter in a pan and add maida and cook for about 2 mins to till the raw flavour of the maida goes off, in between add salt, pepper and garlic powder too.
* Step 5
Put the flame up a bit and add the milk to it, mixing it simultaneously so that no lumps form, then lower it and cook for another 5-10 minutes stirring it throughout till it thickens to the desired consistency like a sauce. Once done pour some over the chicken breast and serve hot. The remaining you pour it in a sauce jug or bowl and serve along with it. Bon Appetit!!!
