Smoking hot – Spaghetti al Salmone Affumicato e Vodka

Smoked meat can be traced back to the cavemen when they would hang meat to dry in their homes near a fire to cure and partially dehydrated which impedes the activity of the bacteria.

Cooking instructions

* Step 1

Boil the pasta in salted water until al dente. Note: putting a dry wooden spoon on top of the pan stops it from boiling over as it destabilizes the bubbles when they come into contact with its water-repelling surface.

Whilst the pasta is cooking, melt the butter in a skillet, add the tomatoes, chilli flakes and half the herbs and cook for 4-5 minutes. Add the vodka and flame it. When the flames die off, stir in the crème fraiche, lemon juice, capers and season with pepper (no need to add salt as the salmon is already salty).

* Step 3

Drain the pasta, reserving a few spoons of the pasta water. Tip the pasta into the skillet with a couple of spoons of the pasta water and turn using two spoons coating the pasta with the butter sauce. Fold in the salmon and remaining herbs and drizzle with the oil.
