Cooking instructions

* Step 1

Ensure all the pulp is removed from the jackfruit seeds. Peel the outer hard cases and boil for 10-15 minutes (or if you prefer boil then peel).

Melt the ghee in a pan on medium heat. Add the cumin and mustard seeds, garlic, ginger, turmeric and chilli and cook for 1-2 minutes until fragrant. Add in the coriander, amchur and salt and mix to combine. Next add the watermelon rind, jackfruit seeds and the water. Cover and cook for 10 minutes, stirring occasionally.

Once the rind is soft, jackfruit seeds are cooked and the sauce has thickened, remove the lid and stir in the mango (if using), shatkora juice and sprinkle on the garam masala. Cook for a further 5 minutes.

* Step 4

Wash the kale leaves well and remove the toughest part of the stalks. Slice the leaves into ribbons and cook in a pan of salted water for 5-7 minutes then drain. Place the kale on a plate and pour on a ladle of the curry.
