It's said that chef Charles Ranhofer came up with the combination of English muffins topped with ham, eggs and hollandaise sauce in the 1860s when Mrs. LeGrand Benedict, one of his regular diners, grew tired of the menu and wanted something new. His recipe 'Eggs a la Benedict' was published in his cookbook in 1894.

Cooking instructions

* Step 2

Mash the black beans with the chilli flakes and a pinch of salt. Peel and mash the avocado, season and splash with a dash of lime. Lightly toast the muffin. Slather the muffin with black beans then top with the avocado.

* Step 3

Whisk the egg whites to get plenty of air in, season with salt and pepper and cook in a round mould in a dry non-stick pan until cooked. Put the grated cheese on the egg and cook for a few seconds until melted. Place the cheesy egg on the the beans and avocado and pour a dollop of chilli sauce on top.

* Step 4

Dollop on a teaspoon of hot chilli sauce and top with the gherkin and other half of the muffin.
