Beef bone broth with noodles

Beef bone broth with noodles

I got a kilo of quality beef bones from the butchers for £2 so I decided to make them into a delicious broth.

Cooking instructions

* Step 1

To make the broth, add all the ingredients to a large saucepan and cover with water.

Bring to the boil, skim off any scum from the surface. Then reduce the heat, cover and simmer over a low heat for anywhere between 6-8 hours or as long as you can until you get a fragrant delicious liquid.

* Step 3

Sieve it into another large pan, bowl or jug, squeezing out as much of the delicious broth with the back of a spoon.

* Step 4

Leave the broth to cool, then skim off the fat. You can use the fat to roast potatoes!

* Step 5

Store your broth in a container for up to 3 days or use straightaway...

* Step 6

To make a quick soup, peel and finely slice the onion, ginger and garlic. And finely slice the chilli.

* Step 7

Cook slowly until onion is softened in a large pan with a good splash of vegetable oil.

* Step 8

Add the bone broth and bring to a boil. Reduce heat to a simmer. Taste and season with fish sauce and soy sauce.

* Step 9

Chop the greens if necessary, then stir into the pan and cook until tender. Stir in any leftover meat to heat through.

* Step 10

Meanwhile, prepare your toppings.

* Step 11

Season soup to taste with soy sauce and lemon juice.

* Step 12

Ladle into bowls and bring everything to the table with the toppings so everyone can help themselves.
