Messy Eggs (from Louise Parker Method)

I'm attempting to make this year the year that I reclaim my sense of well-being and self motivation (it's only February - give it chance!) So, I bought the Louise Parker book - Lean for Life and it is eye opening. Some fantastic recipes and a lot of common sense. These eggs were my first attempt at a breakfast recipe and I've eaten them twice since. Complete credit to Louise Parker but just wanted to share it as it's such an easy and complete brekky to get you started in the morning.

Cooking instructions

* Step 1

Melt butter in a non-stick pan. Fry off the chilli, tomatoes and pepper for 3-4 minutes until softened.

* Step 2

Add eggs and scramble gently.

* Step 3

Season to taste and serve with some lovely, freshly toasted wholemeal bread.(Apologies for the gluten free white squares in the picture - I'd run out of wholemeal!)
