Veg Fried rice

Cooking instructions

* Step 1

Start by making the spicy tomato paste. You can make it prior and store in fridge In a kadhai put oil. As it heats up add garlic, saute for some time. Then add the tomatoes, soaked chillies and salt. Saute all together for some time. Then add little water and cook it till tomatoes becomes soft and mushy. Next add sugar, black pepper powder and mixed herbs. Give a nice mix. Now let this cool down. Then take the mixture and grind into a smooth paste. Our spicy tomato paste is ready!!

* Step 2

Now place a pan / kadhai for heating with oil. As it heats up, put garlic and fresh green chillies. Saute. Next add chopped onion. Saute till little brownish.

* Step 3

Next add the chopped vegetables. Put salt for the vegetables. Cook the vegetables yet keep them crunchy.

* Step 4

Next into the vegetables add the prepared spicy tomato paste (Add amount as per your taste and preferance). Next add kashmiri mirch for colour. Give a nice mix.

* Step 5

Now add in the cooked rice. Give a nice gentle mix. Keep the heat in medium. As you have mixed everything properly, check the salt. If needed add some. Mix again. Let it be on slow heat for some time.

* Step 6

If you like and have onion greens, finely chop them and add. Yummy fried rice is ready!! Serve hot!!
