Fafda
Fafda is a famous Gujrati street snacks. It's combination with jalebi is classic.
In Odisha we have a similar dish we call it lamba ganthia. Since childhood we have been buying it from Cuttack.
I usually do not store it. Make fresh and enjoy!

Ingredient

Cooking instructions
* Step 1
In a mixing bowl put besan, salt, baking soda, turmeric, ajwain and red chili powder. Mix.
Now add oil and mix.
* Step 2
As oil is mixed, add water and make a semi soft dough. It sticks so add 1/2 tsp oil and knead well.
* Step 3
No need to rest. When you are making dough side by side heat oil. Oil must be low to medium hot. Take the dough place it on a clean rolling board. Cut into small equal portions.
* Step 4
Take one portion, make it into a cylindrical shape. Then use your end of palms and start pressing from one end of the board till it can extend. Remember the board must be dry. Then use a sharp knife and slowly remove the fafda.
* Step 5
See the fafda must be nice and thin. Don't make all fafda's at a time. Make and go on putting in medium hot oil.
* Step 6
As it gets fried from one side flip carefully. The size of fafda depends upon the size of your kadhai. Do not overcrowd the kadhai. Colour must not be very dark. But if you add red chili powder, colour will be little darker. So adding red chili powder is your wish. I add it for giving it bit spiciness.
So done. Carefully take out, drain the extra oil.
* Step 7
Serve it with hot chai/ coffee/ papaya kachumber/ kache aam ki chutney/ besan chutney.
But the best combo of sweetness and namkeenness is FAFDA WITH JALEBI...
