Crispy Spiced Coconut Prawns With A Zesty Salsa
This dish is light, delicious and colourful and has an array of textures to delight the palate. It's fresh, zesty and a little spicy with smoked paprika and sriracha mayo for dipping. Ready and on the table within only 35 minutes!

Cooking instructions
* Step 1
To a bowl add the panko breadcrumbs, ground toasted coconut flakes, smoked paprika, turmeric and a pinch of red chilli flakes. Season with white pepper. Mix together. Set aside. Begin to prepare your rice now according to packet instructions (unless using microwave sachet rice, then prepare at the end).
* Step 2
In another bowl mix together all of the zesty salsa ingredients, except the lime juice and wedges, as this will be added later. Store in the fridge until ready to plate up.
* Step 3
Pour enough oil into a large skillet or heavy based frying pan to shallow fry. As the oil heats up dredge the prawns first into the cornflour the egg next then into the spiced panko /coconut breadcrumbs mixture until completely coated. Once the oil is nice and hot (approx 160°C), carefully place the prawns into the hot oil in batches using a slotted spoon and shallow fry until crispy and golden for around a minute on each side. Remove and lay upon kitchen towel to remove any excess oil.
* Step 4
Once your rice is ready, serve it up then squeeze the lime juice into the bowl of chilled salsa and mix. Serve up over the rice and pile the crispy spicy prawns on top. Either drizzle over the sriracha mayo or serve on the side as a dip. Garnish with lime zest on top and a wedge or two of lime on the side. Enjoy! :)
