Pork Chops With A Creamy Cider & Mustard Sauce
These succulent pork chops pair so well with this creamy and sharp cider sauce with a mild taste of sage and thyme. Suggest serving them with creamy black pudding mash potatoes, pan seared leeks and peas for an amazing dinner.

* Step 1
Preheat your oven to 180 (fan). Place a oven tray into the oven lined with foil to heat. Add 2 tbsp oil to a large skillet/frying pan and once really hot season the pork chops well with salt and pepper then add to the pan. Sear on both sides until golden. Remove from the heat. Place them into the now warmed baking tray in the oven and cook until tender and juicy, this should take around 15-20 minutes.
* Step 2
As the pork is cooking work on the sauce. In a saucepan add the chicken stock, cider, thyme and sage leaves. Bring to a vigorous simmer. As it reduces down season with salt, white pepper, garlic powder and add in the cornflour mixture. Next add the honey, stir through. Once thickened remove from the heat.
* Step 3
Strain through a sieve to remove the herbs. Return the strained sauce to the saucepan. Add the cream and wholegrain mustard, stir until smooth and you're happy with the consistency. Serve up and enjoy! :)
