Smoked Cheddar & Spinach Omelette
A fantastic and super delicious breakfast that's easy to prepare, this omelette should be a hit with all the family. I often make this for myself and my son. It's also high in protein and will keep you going until lunch.

Cooking instructions
* Step 1
Heat up a decent non stick frying pan up over a medium heat. Pour in the oil and swill it around the pan to coat the entire base evenly. Once the oil is hot, add in the spinach and sauté it until wilted down.
* Step 2
Season the eggs with white pepper, beat then pour in, ensuring you cover the base of the pan evenly with no visible gaps. Sprinkle over a few red chilli flakes. Fry gently and turn the pan around every couple of minutes on the hob so you cook the eggs evenly.
* Step 3
Add the grated cheddar covering the omelette in a nice even layer and continue to fry until the cheese is melted and bubbly. Take a spatula and get in under the edges of the omelette to loosen it from the pan.
* Step 4
Season generously with flakes sea salt and serve up. Enjoy! :)
