Eggplant Mouttabal

Delicious vegetarian Lebanese dish, my sister's signature!!

Cooking instructions

* Step 1

Peel the grilled eggplant and remove the seeds, then mash it up with a spoon

* Step 2

Place in the mixer and add all the ingredients to it except for the water and mix it all up.

* Step 3

When ingredients are well mixed, check the texture and then you start diluting with water bit by bit until it softens up and texture gets similar to hommos.

* Step 4

Move to a serving dish and drizzle with plenty of olive oil for a great taste. It is usually eaten with pita bread.
