Turkish Menemen

My fav - recipe yields enough for 3 people (or 2 very hungry hippos)

Cooking instructions

* Step 1

Finely chop the onion, and dice the tomatoes and peppers. You want the onions to be smaller than the tomatoes and peppers.

* Step 2

Scramble the eggs in a separate bowl, and season generously with salt and pepper.

* Step 3

Place a large pan over medium heat, and put just enough olive oil to coat the pan, but don't put too much! Add the onions and cook them until they are transparent. Make sure the onions are soft and cooked through before adding the peppers; you don't want the onion taste to suppress your eggs!

* Step 4

Once onions are cooked, add the peppers and cook them down. Once the peppers are cooked, add your tomatoes and turn heat down to Low/Medium. Tomatoes will cook faster than onions and peppers, so be sure to watch the pan!

* Step 5

Once all veggies are cooked, add your eggs and scramble non-stop.

* Step 6

Feel free to shave cheddar or feta cheese into your menemen!

* Step 7

Serve with freshly toasted bread, and a sprinkle of thyme over.
