Chili Cheese Stuffed Jalapenos

This recipe was a #fridgecleanout & #leftoversmakeovers meal for me as I had leftover #chili that I'd made earlier in the week & also some jalapenos on my counter that I wasnt sure what I was gonna do with! 🤣🤦🏻‍♀️ My man loves jalapenos so I'm always looking for new things to stuff them with! 😁👌👍 These were absolutely delicious & super easy to make! 👏🤤🏆 #chilicheese #stuffedjalapenos #bakedstuffedjalapenos #chilicheesejalapenos #jalapenos

Ingredient

Cooking instructions

* Step 1

Preheat oven to 375°. Slice jalapenos in half lengthwise. Scoop out seeds & veins. (set tops & scraps from peppers aside for use later! #useeverypart #cookeverypart #zerowaste) Place peppers side by side in rows on baking sheet. Coat in oil & sprinkle with salt, pepper, & garlic powder or salt. Bake for 20-30 minutes until softened almost all the way.

Remove peppers from oven & reduce oven heat to 275°. Using a small spoon scoop your chili (leftover or fresh made) into your pepper halves. *Note: See my attached recipe!

Next, chop your red onion & pepper remains. (There's usually quite a bit of "meat" still on the tops/ends that we often discard.) *Note: Add in some of the peppers seeds to increase the heat if you like. 🔥😍 Then, mix your finely chopped veggies with your chili garlic sauce & top off your peppers with this mixture.

* Step 4

Finally, sprinkle peppers evenly with shredded cheddar or any cheese that you have or like.

Lastly, return to oven & bake for additional 15-30 minutes or until cheese is melted to preference.

Voila! It is done! Serve & Enjoy!
