California Farm Lemon Grass Paste

To boil or fry with lemon grass, only a small quantity is needed most of the time. I keep two small jars of lemon grass paste handy, one is a jelly for boiling, the other one is a chutney for frying. Stays fragrant all year in fridge.

Ingredient

Food ration :

2 people, 200 ml jelly, 100 ml chutney

Cooking time :

1 hour

Cooking instructions

* Step 1

For the lemon grass jelly: pulverize lemon grass stalk, put in sauce pan, pour 200 ml boiling water on top, steep till cooled. Add table spoon cornstarch, reheat, stir till thickened. Put in jar, put tight lid on jar, store in fridge.

For the lemon grass chutney: pulverize 50 grams lemon grass stalk, put in jar, top off with 100 ml grapeseed oil. Put jar in waterbath, boil jar an hour, cool. Put tight lid on jar, store in fridge.
