Shrek and Fiona Fluffy Pancakes

#morningbreakfast Celebrate St. Patrick’s Day with these healthy avocado & spinach pancakes! A playful strategy to make your little ones eat more greens, convincing them these green wonder pancakes give super powers!

Cooking instructions

* Step 1

Add avocado, spinach, milk and oats and in a blender and blend until smooth. Transfer it into a large bowl. Add the pancake mix, eggs, vanilla extract, green food colour, & honey and mix until combined. Heat a nonstick pan over medium flame.

* Step 2

Grease it with butter. Scoop 1-2 tbsp of the batter into the pan and spread into a thick circle. Cook until bubbles show through, then using a spatula, gently flip and continue to cook until the pancake is cooked and golden brown. Repeat the process for the remaining batter. Top with maple syrup, honey, or your favorite topping.
