Ghiya Malai (Lauki)

Who said Ghiya is boring? If you make it right, it will be relished by all! Try this age old recipe of my Nani and Mom and do share your feedback with me🌺

Cooking instructions

* Step 1

Wash and Peel Ghiya and cut in small cubes.

Boil in cooker with 1/4 Tsp turmeric powder and 1/2 Tsp salt.

* Step 3

Take 1 whistle at high flame and simmer at low flame for 5 minutes.

* Step 4

Discard water or use it as vegetable stalk in any other dish. We will not use here.

Heat a tsp of ghee in a pan and roast cinnamon stick, bay leaf, clove and dried red chillies for a minute at low flame.

Now add cumin seeds and asafoetida. Let them crackle.

* Step 7

Add finely chopped green chillies and cook for a minute.

Add 3/4 Tsp Kashmiri red chilli powder and 1/2 tsp turmeric powder along with 3/4 tsp coriander powder.

* Step 9

Cook for 30-45 seconds at low flame.

* Step 10

Now add Malai. the flame should be low.

Cook for another 1 to 2 minutes until the Malai turns dark yellow in colour.

* Step 12

Now add the boiled ghiya and mix well everything.

* Step 13

Add a teaspoon of salt and mix everything nicely and keep cooking at low flame for a minute.

* Step 14

Cover with lid and cook for another 30 seconds so that all the flavours bind with the ghiya.

* Step 15

After 30 seconds, uncover, mix again and your malai ghiya is ready. serve hot.
