Short lamb leg roast
Eid ul Adha celebrations is not complete without having a sort of lamb/goat roast. Lamb is very traditional for this celebration because it pays homage to the story of Prophet Ibrahim (alayhi s-salām).

Cooking instructions
* Step 1
In a bowl add the yogurt, Kashmiri chilli powder, turmeric, cumin seeds, 1 tablespoon coriander seeds, salt, chaat masala, white pepper, green chilli paste, ginger-garlic paste and lemon juice. Mix well and set aside the marinade.
* Step 2
Place deep cuts on the leg and place in a deep dish. Pour the marinade over the leg and rub well, especially in the cuts.
* Step 3
Cover with saran wrap and refrigerate for 8 hours or overnight.
Preheat oven 400F.
* Step 4
Place enough parchment paper on work station and place onions, garlic bulbs, bay leaves, cinnamon, cloves, black cardamoms, green cardamoms, and remaining coriander seeds.
* Step 5
Carefully place the marinated leg over the spices and drizzle olive oil over the leg.
* Step 6
Wrap the leg with the parchment paper and then wrap in foil.
* Step 7
Place on roasting tray and pour hot water in the bottom of tray.
Steam roast for at least 4 hours.
* Step 8
Remove from oven and take off the foil and parchment paper and broil the leg for 20 minutes at 330F.
* Step 9
Rest the leg to allow the juices to come together before serving with desired salad and dip.
